Blueberry Buckle On The Double Recipe

Ingredients:

1/2 cup all purpose flour
1/2 cup sugar
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/4 cup butter or margarine
1 package (13-1/2 ounces) blueberry muffin mix
1-1/2 cups blueberries (fresh, frozen or canned berries drained)
2 teaspoons lemon juice
1/2 teaspoon grated lemon peel

Combine flour, sugar, spices and butter. Mix with the finger tips until crumble. 

Prepare muffin mix by package directions;  spread in greased baking dish (12x8 inches) 

Cover with 1-1/2 cups blueberries, drained  berries from mix and 1 tablespoon berry juice. 

  Sprinkle with lemon juice and peel;  cover with the crumbly mixture. 

Bake in a moderate  oven 350 degrees F. for  45 minutes to 1 hour. 
Serve warm in sauce dishes with ice cream,  cream,  or a lemony sauce made with juice from the berries!

Makes 6-8 servings!  Yummy, Yummy, Yummy!

I do not normally use package mixes of any kind, but I did give  this a try, and was quite pleased by the results!

Deep Dish Fresh Blueberry Pie Recipe

Ingredients

  • 1 1/2 cups sugar
  • 6 tablespoons quick-cooking tapioca
  • 8 cups fresh Chilean blueberries
  • Juice of 1 orange
  • Pastry dough for a large double crust pie
  • 1 egg mixed with 1 tablespoon milk

Preparation

  1. Preheat oven to 375°F.
  2. In large mixing bowl, toss together sugar, tapioca, blueberries and juice.
  3. Roll out pastry bottom on a well-floured surface to fit in pie dish. Place in the bottom of a 9 1/2-inch deep-dish pie plate. Spoon filling into the pastry shell.
  4. Chill while rolling out top layer of pastry. Cut out 5 or 6 small holes in pastry top using a decorative cookie cutter. Gently roll dough onto top of pie. Crimp edges of pastry to form a tight seal and decorative trim. Brush pie with egg and milk wash.
  5. Bake pie on a tray for 45 to 50 minutes. The blueberry filling should be bubbly and the crust golden brown.
  6. Cool before serving.
