Recipe for Apple Muffins

Apple Muffins Recipe

Ingredients

2-1/4 Cups King Arthur Unbleached Flour
1/2 Teaspoon Sea Salt
1/2 teaspoon nutmeg
1/2 cup + 2 Tablespoons sugar
1 cup peeled, chopped apples
3-1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1 beaten egg
1 Cup Milk
4 Tablespoons Shortening or Margarine

In a large bowl, mix the flour with the baking powder, salt, cinnamon and nutmeg. In a separate large bowl, cream the shortening and only 1/2 a cup of sugar together. Now, add beaten egg and the flour mixture. Add the milk..Mix well with wooden spoon. Add the chopped apples, and gently fold in. Put paper fillers in your muffin tins, and fill each cup only about 3/4 full.

Sprinkle the top of the muffins with this sugar mixture:

2 Tablesppons Sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon

Bake in the oven at 425 degrees for 20-25 minutes!
