Recipe for Baked Italian Chicken


Ingredients:
1 broiling chicken, cut in half
1/2 cup oil
1/2 cup vinegar, red wine or regular
clove garlic or garlic powder
poultry seasoning
salt and pepper

Arrange the chicken in a shallow baking  pan and sprinkle with the poultry seasoning, salt and pepper. Mix the oil, vinegar and garlic together in a  covered jar and shake well.  Pour this over the  chicken and bake at 350 degrees for about  1-1/2 hours, depending on the size of the chicken.  Serve with baked potatoes, tossed salad and  string beans.

A great recipe for a classic dish with a twist that will help you save time. What could be better?

Ingredients
  • 3/4 cup plain dry bread crumbs
  • 1/2 tsp. Italian seasoning
  • 1/4 tsp. garlic powder
  • 6 boneless, skinless chicken breast halves (about 2 lbs.)
  • 1 egg, beaten
  • 1 jar (1 lb. 10 oz.) Ragú(r) Old World Style(r) Pasta Sauce
  • 1 cup shredded part-skim mozzarella cheese (about 4 oz.)
  • 12 oz. pasta, cooked and drained

Preparation

  1. Preheat oven to 400°. Combine bread crumbs, Italian seasoning and garlic powder in shallow dish. Dip chicken in egg, then crumb mixture; turn to coat.
  2. Arrange chicken in 13 x 9-inch baking dish. Bake 20 minutes.
  3. Pour Pasta Sauce over chicken; top with cheese. Bake an additional 10 minutes or until chicken is thoroughly cooked. Serve with hot pasta.

Serves  6 servings

Notes, Tips & Suggestions
TIP: Most dishes that call for frying can be baked to cut down on the fat. Try substituting eggplant for chicken for a vegetarian version.
