Recipe for Banana Butterscotch Dessert

Ingredients:

1 cup dark brown sugar
2 tablespoons light cream
3 tablespoons butter
1/8 teaspoon vanilla
4 bananas
1/2 cup whipping cream
1/4 cup chopped nuts

In saucepan, place the sugar, cream, butter and vanilla. Stir over medium low heat until the sugar has dissolved and is bubbly (takes about 5 minutes)

In a small serving dish, slice the bananas. Pour the butterscotch sauce over the bananas. Top with whipped
cream and nuts...Serve immediately.

Makes 4 servings.



Recipe for No-Bake Butterscotch Snack Bites

Ingredients

  • 3 cups toasted rice cereal
  • 1 cup quick oats
  • 1 cup coarsely chopped walnuts, pecans and/or almonds
  • 1 2/3 cups (11-ounce package) Nestlé Toll House Butterscotch Flavored Morsels, divided
  • 1/2 teaspoon salt
  • 1/2 cup light corn syrup

Preparation

  1. PAPER-LINE or lightly grease 24 muffin cups.
  2. COMBINE cereal, oats, nuts, 1/2 cup morsels and salt in large mixing bowl.
  3. MELT remaining morsels and corn syrup in uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.
  4. DRIZZLE melted morsel mixture over cereal mixture; stir until combined. Working quickly, press 1/4 cup of mixture into each prepared cup. Let stand at room temperature for 20 minutes or until firm. Store in tightly covered container(s) at room temperature.

Yields 2 dozen snack bites

Notes, Tips & Suggestions
For Mini Snackbites: Paper-line or grease mini muffin cups. Prepare recipe as above; press about 1 tablespoon of mixture into each prepared cup. Makes about 4 1/2 dozen mini snack bites.

For Snackbite Bars: Lightly grease 13 x 9-inch baking pan. Prepare recipe as above and press mixture into prepared pan. Let stand at room temperature for 30 minutes or until firm. Makes 2 dozen bars.

Tip: Morsels can also be melted on top of a double boiler following package melting directions, adding corn syrup to melted morsels.

Easy, Elegant Dessert Bars

Recipe for Creamy Orange-Chocolate Truffle Bars

Ingredients

Base

  • 1 cup Land O Lakes Butter, softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 1/4 cups Pillsbury Best All Purpose Flour
  • 1/2 cup Fisher Chef's Naturals Chopped Pecans
  • Truffle
    • 1 can (14 ounces) Eagle Brand Sweetened Condensed Milk
    • 1 bag (12 ounces) Hershey's Special Dark chocolate baking chips (2 cups)
    • 2/3 cup Smucker's Sweet Orange Marmalade
    Topping
    • 1 container (8 ounces) mascarpone cheese
    • 1 1/3 cups granulated sugar
    • 2/3 cup whipping cream
    • 1 tablespoon grated orange peel (from 1 large orange)

    Preparation

    1. Heat oven to 350°F. Spray 13x9-inch pan with Crisco Original No-Stick Cooking Spray.
    2. In medium bowl, beat butter, powdered sugar and salt with electric mixer on medium speed until fluffy. On low speed, gradually beat in flour until dough forms. Stir in pecans. Spread mixture in pan. Bake 15 to 20 minutes or until golden brown. Cool completely, about 30 minutes.
    3. In medium microwavable bowl, microwave milk and chocolate chips uncovered on High 1 minute; stir. Microwave up to 1 minute longer, stirring until smooth. Stir in marmalade; spread over base. Refrigerate 1 hour or until set.
    4. In medium bowl, beat cheese, granulated sugar and cream on medium speed until smooth. Beat on high speed until mixture is thickened. Stir in orange peel. Spread over truffle layer. Refrigerate 1 hour or until chilled. For bars, cut into 5 rows by 4 rows, wiping knife after each cut. Store covered in refrigerator.
