Recipe for Banberry Tarts

 Banberry Tart Recipe

Ingredients:
1 cup chopped raisins
1 large apple, peeled and sliced
Juice of one lemon plus its grated rind
3/4 cup sugar
1 egg
Prepared Pie crust, unbaked

In a pot, cook all the above ingredients over low heat for about 12 minutes, stirring frequently. Prepare your pie crust by rolling out thin and making squares that measure about 4" x 4". Place 1 tablespoon of the cooked filling on 1/2 of the square.  Fold the pastry over, and press edges toether.  Make a couple gashes on each square. Bake on greased cookie sheet in a 400 degree oven until pastry is golden.
