Beef Stew Recipe

   
Ingredients:
1-1/4 to 1-1/2 pounds good stew meat   Cut pieces into bite size
Carrots (depending on size..3-5 carrots)  I do not peel the carrots, but
cut in big chunks
Onions (one large) Chopped
Celery (about 2 stalks..Chopped)
Mushrooms (about 4 large ones, chopped)
Potatoes  (about 5 medium potatoes) Chopped,  peeled, but big pieces
Paprika  (about 1/2 teaspoon)
Garlic Salt  (about 1/4 teaspoon)
Onion Salt  (about 1/4 teaspoon)
Salt  (about 1/8 teaspoon)
Oregano (about 1/8 teaspoon)  (optional)
Pepper (about 1/8 teaspoon)
Flour (enough to roll the beef in)
Salt Pork  (a small piece, cut in 1/4's)  (if you don't have the pork,
regular oil will do, about 2 tablespoons)
Ketchup  (about 1/4 cup)  More if needed
Mild Tomato Salsa  (about 1/2 cup)  More if needed
V8 Juice (about 6 ounces)  More if needed
Marjoram  (optional...I didn't have any, so used oregano)

I use a 4-5 quart sauce pot for this recipe.  Place salt pork in pan, and
saute on low heat for about 15 minutes, Add the beef that has been floured, and then sprinkled with salt and  pepper.  Let the beef brown on all sides. Takes about 10 minutes.  While beef is browning, prepare vegetables.  After  beef is browned, add water..I usually add enough water to bring the water level to 1/2 the pot.  Then, add the  rest of the ingredients in no special order. Once you add all the ingredients, you can add more water, so that the pot  is a little more than 3/4 full.   Bring the
stew to a boil, then reduce heat to a little below medium heat.  Take a  taste test after 15 mins cooking.  You can than tell whether to add more seasoning.  After this time, reduce heat again to  low.. I use #3 setting on my stove. I do not use a cover for the pot.  The stew is ready in about 2-1/2  hours..Sometimes 3, depending on the cut of meat. Stir every 30 minutes with wooden spoon.  You can tell when the stew is  about ready, because the gravy will start to thicken.  I find that using a wooden spoon in the stirring makes a  difference here.  I use wooden spoons for most of my baking and cooking.   Also, with stew, use a good pot...A heavy  one.  Don't use a pot that is  light, teflon coated, aluminum, etc. I use a large Cuisinart pot, heavy stainless.  Or, use a crockpot!

Everyone has a different taste when it comes to stew. Some like it thick,  others thin...This is a medium stew..Not too thick, or not too thin. Just right!  If your tastes are simple, you can use less of garlic and  onion salt, and omit the marjoram and oregano.  No v8 juice? You can use tomato juice.  Just recommend that you keep it simmering on low. Don't  try to hurry up stew, cause it just will never work! Serve with Texas Biscuits...I make them, but also cheat when I don't feel  like getting flour all over the place.  I have tried just about every brand in the dairy case.  So far, the best is by Shaws, our  local store brand. Texas Biscuits-regular size (the king size are not that  good) 10 biscuits in a can, and costs about $1.19, sometimes on sale for  99cents.  They don't hold up that well in the refrig...Must use them within  a month, or they start to taste off.
