Ingredients: 3 large chicken breasts, boneless and skinless 6 slices boiled ham 6 slices Swiss Cheese 2 Tablespoons Cream 3 eggs Bread Crumbs Flour 2 Sticks Butter 1/2 cup Chicken Stock Parsley Pound the chicken breasts till flat between waxed paper. Mix egg and cream in small bowl.. Coat ham in egg and cream mixture and place on top of chicken breast. Add slice of cheese. Tuck in sides and roll up, putting sealed edges on bottom. Now, dip the entire chicken roll in the egg and cream mixture, then into a mixture of 4 parts bread crumbs to 1 part flour. Coat well on all sides. Saute in butter until brown. Mix the melted butter and the chicken stock and pour into bottom of a baking dish. Add the chick, seam side down. Cover dish with foil and bake at 350 degrees for 40 minutes. Uncover for the last 10 minutes of baking. Garnish with parlsley. Serves 6 Recipe by Carolyn Guild |
