4-5 pound chicken
3 stalks of celery, chopped with leaves
2 carrots, chopped
1 teaspoon salt
1 onion, chopped
parsley
water
Place chicken in large
pot and cover with
cold water. Add the salt, onion and parsley. Cover
and
simmer for 2-1/2 hours or until chicken is tender. Add the celery
and carrots during the last 1/2 hour of cooking. Skim fat off top. Be
sure to remove the chicken bones and any other undesirable
pieces. You may
add noodles to this soup if you wish. Add the last 10 minutes of
cooking.

Ingredients:
4-5 pound whole chicken
3 celery stalks,chopped, with
leaves
2 carrots, chopped
1 teaspoon salt
1 onion, chopped
Fresh Parsley (or dried)
Place chicken in
large soup pot. Cover with cold water. Add the celery,
carrots, salt, onion and parsley. Simmer for 2-1/2 hours or until
chicken has come away from the bones. Remove bones and skin from
the broth by straining. Be sure to skim the fat from the top
also. Serve the soup with wide noodles.
