Recipe for Clam Cakes Ingredients: 1 cup chopped clams (reserve 2 tablespoons clam juice) 1 egg 1/4 cup milk 3/4 cup flour 1 teaspoon baking powder 1/4 teaspoon salt 1-1/2 teaspoons butter, melted In bowl, beat the eggs. Add the milk and the clam juice and mix well. Add the flour, baking powder and salt and mix. Add the melted butter and the clams. Mix well with wooden spoon. Fry in hot oil till golden brown on both sides. Drain well and serve with cole slaw and tartar sauce.
