Recipe for Coconut Lime Rice Pudding Ingredients: 16 oz of Kozy Shack Rice Pudding (or your own home made rice pudding) 2 tablespoons lime juice (fresh or bottled) 2 tablespoons canned coconut milk toasted flake coconut for garnish Mix the pudding, lime juice and coconut milk together. Put in individual serving dishes and garnish with toasted coconut. Serve immediately. Makes 4 individual servings. This is a recipe I got from my Kozy Shack newsletter. I tried it and I loved it! Their rice and tapioca pudding are as good or better than some home made puddings I have had tried. Another Note: Plain Rice Pudding is great for dogs ! All three of my dogs love it as a special treat! Be sure the dog is given plain rice pudding, since they don't care for lime.
