Ingredients: 3 cups cranberries, fresh or frozen 1 cup finely chopped walnuts 2 cups sugar 1 cup light cream 3/4 cup unsalted butter, softened 3 lightly beaten eggs 1 teaspoon vanilla 1-1/2 cups unbleached flour 1 teasoon baking powder 1/2 teaspoon salt Grease a 9 inch square baking pan or bundt pan. In the pan, combine the cranberries, walnuts, and 1 cup of sugar. In a small mixing bowl, add the butter and remaining 1 cup sugar and 1 cup light cream..Add the eggs and vanilla and mix well. Add the flour, baking powder and salt and mix well with wooden spoon. Drop this batter over the the cranberry mixture in the pan...Drop by the spoonful and then spread to even out. For the topping, combine 1 tablespoon of sugar with 1/2 teaspoon of cinnamon and spinkle over the batter. Bake at 350 degrees for 50 minutes... Makes 10 servings.
