100 Year Old Recipe for Delmonico Pudding Ingredients: 1 quart milk 4 tablespoons corn starch 4 eggs, separated 6 tablespoons sugar pinch of salt 1/2 teaspoon vanilla Put the milk into the top of a double boiler and scald. In small bowl, wet the cornstarch with a bit of cold milk and mix and add to the milk. In small bowl, beat the egg yolks and the 3 Tablespoons of sugar well, and stir all of this into the hot milk in pot and mix well. Remove from heat when thickened and cool. When cold, pour into a baking dish. Whip the egg whites stiff with 3 tablespoons of sugar and vanilla. Mix well. Put this mixture on top of pudding and brown in the oven at 375 degrees for about 30-45 minutes. This is an old recipe from The Magic Cook Book, early 1900's.
