Recipe for Eclair Cake Recipe

Ingredients:

1 cup water
1/2 cup butter or margarine
pinch of salt
4 eggs
1 cup flour
4 cups milk
2 packages instant vanilla pudding
12 ounce container of Cool Whip
8 ounce package cream cheese, softened
Chocolate Syrup

In a large sauce pot, add water, butter and salt and bring to a boil.   Remove from the heat.  Add flour and mix well.  Add eggs, one at a time, beating after each one.  Grease an 11x16" jelly roll pan and spread the dough on the bottom and on the sides of the pan.  Bake for 25 minutes at 400 degrees.  Remove from oven and let cool.   Prepare the instant pudding according to the directions on the box.  Add the softened cream cheese to the pudding, and blend well.  Spread this mixture over the cooled pastry. Refrigerate. When this is firm and chilled, add the Cool Whip and drizzle the chocolate syrup over this...Refrigerate till served.  Makes 24 servings.
