German Potato Salad Recipe

 Recipe for Evy's German Potato Salad

Ingredients:

3 pounds small salad potatoes
6 slices of lean bacon, diced
1 onion, diced or grated
1 cup sugar
2 tablespoons flour
2 teaspoons salt
1 cup water
1/2 cup vinegar

Boil the potatoes in their jackets.  Cool, peel and  slice thinly.  Place potatoes in a bowl and add onion.  Fry bacon until brown, then remove the bacon and not the fat.. In the pan add the sugar, flour, salt,  water and vinegar.  Cook until thickened. Pour this mixture over the potatoes and onion in the bowl. Add the bacon and toss! Recipe yields 6-8 servings!  

One of the best German Potato Salad  recipes I have used.  I hope you agree..  WARNING! This is not a dieters dish!  VERY HEAVY ON FAT!
