Recipe for Eye of the Round Roast Beef


Mix together 1 cup Kosher salt, 3 tablespoons black pepper and 1 tablespoon garlic powder. Take a 2-4 pound eye of the round roast and roll the roast in this mixture.. Be sure to coat the
entire roast.  Place in roasting pan, with just about 1/8 inch water on bottom of pan. Roast in a preheated 500 degree oven and cook for 8 minutes per pound for a medium rare roast. For example, a 3 pound roast would roast for 24 minutes.   Shut off the oven and do not open the door.  Keep the roast in the oven for 2 hours.
