BEEF FILLET
SALT PORK
BUTTER
SALT
AND PEPPER
FLOUR
THE FILLET
IS THE UNDER SIDE OF THE
LOIN
OF BEEF, THE TENDERLOIN. REMOVE SKIN,
FAT
AND LIGAMENT WITH A SHARP KNIFE. RUB THE UPPER SURFACE OF THE
FILLET
WITH STRIPS OF SALT PORK. THEN, RUB THE ENTIRE FILLET WITH SOFT
BUTTER
. DREDGE WELL WITH A MIXTURE OF FLOUR, SALT AND PEPPER.. PLACE THE
FILLET
IN A SMALL PAN. (DO NOT USE WATER) BAKE IN A SLOW OVEN AT 300 DEGREES
F.
