Ingredients: 6 Medium Idaho Potatoes, Previously Baked 1 Large Onion 6 Strips Bacon 4 Mushrooms, sliced Sea Salt Pepper Paprika Garlic Rice Wine Vinegar Cook bacon till brown in large frying pan. Remove bacon from pan and set aside. Remove the pan from the fire, and let the oil cool a bit. Slice the potatoes, skins and all. Chop up your onion and mushrooms. Put potatoes, mushrooms and onions in the pan with the bacon grease and put the pan back on the burner at medium low heat. Sprinkle with salt, pepper and paprika. Chop up 1 garlic clove and mix in. Add a couple shakes of rice wine vinegar and mix well. Mix and chop up the potato slices while cooking. Cook for about 8-10 minutes on medium low-add the bacon and mix well. Don't leave the kitchen-this need frequent turning to prevent burning. A nice hearty meal for a cold morning! Serve with Catsup. This makes about 4 large servings. Enjoy! I
think that baking
the Idaho Potatoes makes this a good dish. The potatoes were made about
3 days before I made the homefries. (kept in refrigerator of
course)
I have tried different methods, different potatoes, but this recipe was
give a whopping thumbs up! Great Homefries for Breakfast or
