Honey Oatmeal Bread Recipe Ingredients: 5-7 cups unbleached flour 2 tablespoons dry yeast 1-3/4 cups water 1 cup quick cooking rolled oats 1/2 cup wildflower honey 1/3 cup margarine 1 teaspoon salt 2 eggs In a large bowl, place 2 cupos of flour and the yeast. Mix together. Now, in a pot, put in 1-3/4 cups water, 1 cup oats, honey, margarine and salt and cook on low till the margarine has melted. Add this to the flour mixture and mix. Add the eggs and beat at low speed for about 1 minute. Mix with spatula and now beat an extra 3 minutes at high speed. Now, stir in as much flour as you can mix in. Knead in the remaining flour to make a soft dough that is smooth and elastic. Knead for about 5 minutes. Shape into a ball. Place in a greased bowl, and turn, so the top gets greased. Cover with clean cloth and let rise till doubled.about 2 hours. Remove from bowl, and place on floured bread board. Punch down and divide dough in half. Cover again, and let rise for 10 minutes. Grease 2 bread p[ans. Shape the dough into loaved and put the loaves in the pans. Cover, and let rise again for 1 hour, or until double. Bake in a 375 degree oven for 40 minutes. Just before removing bread from oven, take a softened stick of butter, and spread on the top of the loaves. Let melt in. Remove from oven and let cool on wire rack. Recipe is from Joanne Wallce of West Barnstable. This recipe won 1st prize at the Barnstable County Fair in 1988. This bread is worth the effort to make..Won't last long in the house, guaranteed!
