Ingredients:
4 cups chicken stock
1 pound cooked lobster meat cut in small pieces
5 cups scalded milk
1/2 cup butter
1/2 cup flour
3 teaspooons salt
1/4 teaspoon cayenne pepper
1/2 cup Sherry
In large pot, blend the flour and butter together
over
low heat..When a paste, add the stock and the milk. Simmer for 5
minutes. Add the lobster meat, salt and pepper. Simmer for
1 hour...Be sure not to let the bisque boil..Simmer on low!
Stirring every 10 minutes. Just before serving, add 1/2 cup
Sherry. This recipe serves 12..
