Maine Blueberry Muffin Recipe


Ingredients:

2 cups flour
2-1/2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
1 egg, well beaten
1/2 cup milk
1/4 cup oil
3/4 cup blueberries

Place dry ingredients in bowl.  Mix egg and milk in a small bowl and then  add to the dry  ingredients.  Stir well with wooden spoon.  Add the oil and mix.  Fold in the blueberries.   Bake in greased or papered muffin pans  in a 400 degree
oven for 20-30 minutes, or until done.

Healthy Foods for Healthy Kids

(Family Features) - It seems that parents are on a continuous hunt for healthy foods that kids will actually eat. One of the simplest solutions is to choose soyfoods as the basis for snacks and meals.

The 5-6' tall bushes become a blaze of crimson in the fall, so they are ideal arranged as an informal hedge. Set plants 4-8' apart and make sure the soil is acidic. You'll have fresh blueberries for pies and preserves for many, many years.

Blueberry Pancakes Recipe

For a healthy start to the day, try these Blueberry Pancakes made with soymilk
And Serve with the Wile Maine Blueberry Jam shown above!

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup vanilla or plain soymilk
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 3/4 cup blueberries

Preparation

  1. Combine flour, cornstarch, baking powder and salt in a medium mixing bowl. In a small bowl, whisk eggs, soymilk, oil and honey until thoroughly combined.
  2. Pour soymilk mixture over dry ingredients and whisk gently until barely combined - the batter should be slightly lumpy. Gently fold in blueberries. Cook on a hot, oiled griddle.

Serves
Yield 10-12 pancakes
