Recipe for Italian Minnestrone Soup Ingredients: 2 stalks celery, cut up 1/2 pound green peas, shelled About 10 fresh string beans, chopped 2 large cabbage leaves, chopped 1 carrot, chopped 1 zucchini, chopped 1 onion, minced 1 large potato, diced 1 can tomatoes 1 cup elbow macaroni (uncooked) 1 cup dried beans (uncooked) 2 quarts of stock grated Romano Cheese Directions: Soak the dried beans in water overnight. Drain, add the beef or chicken stock and cook until the beans are tender. Add all the other ingredients except for the cheese. Add at least 2 quarts of water and season to taste with salt and pepper.
