Never Fail Meringue Recipe Ingredients: Egg Whites 3 Tablespoons Water 6 Tablespoons Sugar 1-1/2 teaspoons baking powder 1-1/2 teaspoons cornstarch In a small bowl, beat the egg whites with the water until frothy. Add the Sugar, only 1 tablespoon at a time, beating after each tablespoon added. When egg whites are stiff, add the baking powder and cornstarch and beat well. Place the meringue mixture on your hot lemon and lime pie filling. Bake at 375 degrees for 8-10 minutes, until golden. When removing from the oven, be sure to keep the meringue away from drafts. 1859 Recipe for Pie Crust Ingredients: 1 pound sifted flour 1/2 pound sweet lard or beef drippings dessert teaspoon of salt Work the lard into the flour and salt mixture. When mixed, put to it enough cold water to bind it together. Flour the pastry slab and flour the rolling pin. Take part of the paste and roll it to less than a 1/4 of an inch thick. For the upper or outside crust of a pie, roll the paste out thin, then spread a bit of butter, half the size of an egg, over it. Fold it up and roll it out again, and cover the pie. As are most recipes from that time period, it is assumed that you know the basics of baking and cooking and no other directions are given.
