Recipe for Orange Frosting
Ingredients:
1 cup sugar
1 egg white
1/4 teaspoon cream of tartar
1/2 teaspoon baking powder
Rind of one orange, grated (otherwise called orange zest) *
4 tablespoons cold water
Put sugar, water, egg white, cream of tartar in the top of a double
boiler.
Be sure lower part of double boiler has boiling water in it. Beat
till the mixture comes to a peak. Remove from heat. Add
baking powder, grated orange peel, mix well and let cool.
When grating the orange peel, be sure not to grate the white pith, as
this can be bitter. And, also, be sure the orange has been rinsed
first!
