Recipe for Penuche Fudge

Ingredients:
2 cups brown sugar
3/4 cup whole milk
1 pinch of salt
1 tablespoon butter
1/2 teaspoon vanilla extract

Use a candy thermometer..Will save you many headaches!

Place all the ingredients, except the vanilla, in a heavy saucepan. Stir and cook till the temperature reaches 238 degrees F.  Remove from the heat and set the saucepan in ice cold water until the temperature of the mixture goes down to about 140 degrees F.  Add 1/2 teaspoon vanilla extract and beat this into the fudge until mixture is creamy.  Pour into a square buttered pan.  When the fudge is slightly set, mark it into squares and let  stand until cold!

Note:  You may add chopped nuts, shredded coconut, or two tablespoons of peanut butter to the fudge  when you add the vanilla. Yummy, Yummy, Yummy!

Spiced Soy Hot Chocolate

Ingredients

  • 1 1/2 cups light chocolate soy milk
  • 1 tablespoon natural peanut butter
  • 1/2 teaspoon cinnamon
  • Light whipped cream, optional garnish
  • Cocoa powder, optional garnish

Preparation

  1. In a medium saucepan, combine soy milk, peanut butter and cinnamon. Cook over low to medium heat, whisking frequently, until mixture is smooth and peanut butter is melted, about 5 minutes. Serve in mug.
  2. Top with whipped cream and sprinkle with cocoa powder, if desired.

Serves
Makes one 12-ounce serving
