Ingredients: 2 cups chicken broth 1/4 cup minced onion 1/2 cup USA red lentils, dry 1 cup frozen corn kernels 2/3 cup minute rice 1/4 cup red bell pepper, chopped 1 cup milk salsa 15 ounce can red kidney beans, drained 1/2 teaspoon chili powder 1/4 teaspoon garlic powder 8 tomato slices In large heavy pot, combine the broth, onion and lentils and bring to a boil. Reduce heat and cover and simmer for 10 minutes. Add the corn, return to a boil, and simmer another 5 minutes. Add the rice, bell pepper, salsa, chili powder and garlic..Mix well and cover. Simmer for 5 minutes.do not stir..Uncover and stir once or twice, gently. Garnish with tomato slices. Back to Bean Recipes
