Roasting Corn Recipe

Be sure to use Fresh Ears of Corn. Build a small fire in an outdoor fireplace or grill. Use small pieces of dry soft wood that will burn fast and not smoke.  Charcoal does not work as well for roast corn. Pull off 1/2 a husk on each ear.. Place the ears of corn on the grill, and turn occasionally until the husks are burnt off.  Takes about 10 minutes. You may need to add more wood to the fire.  Drizzle with melted butter and sprinkle salt..

Recipe for Savory Sweet Corn Toppers

Ingredients
  • 1 package Schwan's Mini Super Sweet Corn on the Cob, frozen

Preparation

  1. Preheat grill to Medium heat.
  2. Thaw cobs 10 to 15 minutes under cold running water.
  3. Wrap cobs in aluminum foil.
  4. Grill for 30 to 35 minutes. Turn cobs several times throughout grilling time.
  5. Top corn with one of these combinations: Salsa: Add some south-of the-border zing by topping with your favorite store bought or homemade salsa.
    Santa Fe Sour Cream: Make this flavorful, reduced calorie topping by adding taco or fajita seasoning to low-fat sour cream.
    Lime Cilantro: Mince fresh cilantro. Add a dash of lime juice, then salt/pepper to taste.
    Southwest Chipotle: Easy to find in the spice aisle, Southwest Chipotle seasoning gives sweet corn a tasty Tex-Mex twang.
