 Recipe for Sardi's Meat Sauce
 

 The following recipe is the sauce that is used
in Sardi's in New York City!

Ingredients:
1 pound ground beef
1/4 pound ground veal
1/4 teaspoon fresh sage
1/4 teaspoon oregano
1 tablepoon salt
1/4 teaspoon pepper
1 onion
1/4 pound ground mushrooms
3 cloves of garlic, ground
1 cup canned tomato puree
1/2 cup canned tomato paste
4 cups canned plum tomatoes

Directions:
In large bowl, mix the ground veal and beef together.  Put the ground meat in a baking pan or casserole dish and bake at 375 degrees for 20 minutes. Stir and cook for 10 minutes more.

In a small pan, combine sage, oregano, salt, pepper, onion, mushrooms and garlic. Heat over low heat, stirring till onions are clear.  Spread this mixture over the meat in the baking pan and keep baking for another 15 minutes.  Then, remove baking pan from oven and put the mixture into a large pot.

Add all 3 canned tomatoe varieties and mix well. Bring to a boil, then simmer for 1-1/4 hours.  Check seasoning, and ajust the salt if needed.  Cool and store in the refrigerator. it will keep a week if covered..Reheat when ready to use.

Easy Methods to Can Tomatoes
Fill large pot with water.  Boil....Place the tomatoes
in the boiling water for about 1 minute.   Immediately remove the tomatoes and place in a colander.  Pour ice cold water over them. This method will make the skin very easy to peel off. Put the tomatoes in sterilized jar and add cold water to cover them.  Add  2 tablespoons of salt.  Seal and cover!

The easiest way to can tomatoes.  Have a a pot of boiling water, dip the  tomatoes in the pot for about 1 min.  Take them out and immediately run them in a colander of cold water.  The skin will just fall/peel off.  Place them  in a canning jar add cold water to cover place a couple of tbls. of salt on top and presto, you can seal them.
