Ingredients: 1 large onion, quartered 2 large grated carrots 1 pod garlic, cut into very small pieces 1 large tomato, cut into eighths 1 cup long-grain uncooked rice 2 tablespoons butter water (about a cup for an 8 inch skillet) In
a large skillet, melt butter
on low heat. Add the rice and stir contantly for about 3
minutes.
Add the rest of the ingredients and cook for about 5 more minutes, or
until
the rice starts to turn brown. Add enough water to cover
the
bottom of pan about 1/4 inch, stirring rice at the same time.
Water
must be very hot. Cover and let the rice steam until done. Test
every
so often. To see if rice is done, a grain of rice will be soft between
your fingers and will not show a hard core. You may add more
boiling
water if needed.
