Spanish Rice Recipe

Ingredients:

1 cup boiling water
6 tablespoons uncooked rice
1 onion, chopped
6 slices bacon, fried and crumbled
1 can diced tomatoes
Cooking oil

Saute onion in oil till clear. In a casserole, put the rice, sauteed onion, and crumbled bacon and mix.  Add the can of tomatoes. Season with salt and pepper.
 Bake 50 minutes in 350 degree oven
