  Cheese Recipe    Recipe for Volstead Rarebit

(Volstead Act 1919, prohibiting the sale of alcohol) 

Ingredients:
2 cups sharp cheddar cheese, grated
2 tablespoons butter
1 tablespoon corn starch
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire Sauce
3/4 cup milk

Melt butter in the top of a double boiler.  Stir in the corn starch, mustard, Worcestershire Sauce and Paprika. Stir still smooth.
Add the cheese and milk, and continue stirring over low heat until smooth.  Serve on toast or crackers.
