A Tip on Buying Bread Pans:

Use Heavy Duty Pans.

Do not skimp and purchase the lightweight aluminim
you see in discount stores.  In order for
the bread to bake evenly, you need a heavier
pan to prevent the inside of the bread from
being underdone and the outercrust from
being overdone.   

Purchase Professional Grade Bakeware.
There is a world of difference.  I prefer baking with cast iron, because it bakes so evenly.  The light weight teflon coated pans are ok for loaf breads and muffins, but not for yeast breads.  I have used glass loaf pans when in a pinch, and they do work, but you need to keep the temp a little lower and keep an eye on the browning crust.
